ORCHARD OLD-FASHIONED

One of the things I love about the Old-Fashioned is that it has a little bit of not-so-old-fashioned versatility that belies its name. Although many a fine bartender has taken to eschewing the 1970s and 1980s fruit-bowl additions to the drink (such as the famed muddled orange and cherry), if there’s fresh fruit around, I like to go for it and toss ’em back in the mix. So swap out that orange and cherry for whatever you like. Purists may damn such unbridled behavior, but as we’re not curing cancer here, it’s A-OK to color outside the lines a little bit. Peaches seem like a natural fit (and to that effect, I also switch the traditional rye in this drink to bourbon). And despite the fact that I do not live in the great state of Georgia, small, sweet versions of these peaches seem to grow everywhere from craggy branches around where I live. I can’t find enough things to do with them in the summer. I make jam, preserve wedges of them in syrup, grill them, cook with them, and, of course, cocktails are on the docket, too. Their juicy, sweet flavor gets a nice complement from bourbon whiskey, and to it I like to add some fresh, bright lemon thyme from the pots in my backyard.
