We don’t know who invented them, but we do know that sweet creamy frosting sandwiched between mini chocolate cakes is divine! The filling can be made with store-bought marshmallow fluff or homemade Fluffy Marshmallow Crème and spiked with rum. Pair this delight with a classic Rum & Coke cocktail for the ultimate in tipsy indulgence.

Chocolate Soda Cakes

½ cup (1 stick) unsalted butter

1 cup sugar

2 eggs

1 teaspoons vanilla extract

½ cup buttermilk

¼ cup cola

2½ cups all-purpose flour

5 tablespoons unsweetened cocoa powder

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

Fluffy Rum-Spiked Cream Filling

½ cup (1 stick) unsalted butter

1 cup marshmallow fluff

3 or 4 tablespoons rum

2 cups confectioners’ sugar

Finishing

Confectioners’ sugar for dusting, if desired

Mini chocolate chips for rolling, if desired
