Chicken with Sweet Potato and Green Beans

Prep time: 10 minutes

Cooking time: 20 minutes

NUTRIENTS PER SERVING:

Carbohydrates – 37 g

Fat – 8 g

Protein – 47 g

Calories – 400

INGREDIENTS:

2 tbsp coconut oil

4 chicken breasts, sliced

350g sweet potato, cut into wedges

½ tsp sea salt

½ tsp black pepper

½ tsp paprika

350g green beans, trimmed

1 pinch of preferred spices

INSTRUCTIONS:

Preheat the oven to 375˚F.

Put the potatoes onto a baking tray. Season with spices and bake for 25 minutes.

Blanch the green beans with a pinch of salt for 1-2 minutes.

Put the chicken in a frying pan over a medium heat.

Brown on all sides and season with spices. Set aside.

Drain the green beans. Allow all the ingredients to cool.

Add a scoop of wedges, green beans, chicken to each container.

Cover and store in the fridge. Enjoy!
