INGREDIENTS

2 cups (100 g) shiitake mushrooms

2 cups (170 g) trumpet mushrooms

2 cups (100 g) maitake mushrooms

¼ cup (60 ml) plus 2 tablespoons Beet Gochujang (this page) or store-bought gochujang

1 tablespoon toasted sesame oil

1 tablespoon avocado oil

Garnish

Sesame seeds or gomasio

For serving (optional)

Green or red leaf lettuce leaves

2 tablespoons miso paste

Kimchi

METHOD

Preheat the oven to 400°F (205°C). Massage the shiitake, trumpet, and maitake mushrooms with the gochujang. Transfer to a parchment-lined baking sheet and drizzle the oil on top. Roast for 20 minutes, or until browned. Sprinkle with the sesame seeds and serve with lettuce, miso paste, and kimchi, if using.

Note: I love shiitake, trumpet, maitake, and enoki mushrooms for this recipe, but feel free to sub 6 to 7 cups (370g–420g) of your favorite assortment of mushrooms.
