Vermouth is technically in the class of being a fortified wine. Wine naturally contains sugars, which is a problem, and the procedure of fortifying wine adds even more. The first attempt at making our own sugar free vermouth was the Sweet Vermouth, so please refer to that recipe or visit mixdrinkrepeat.com for the backstory behind that recipe. Dry Vermouth is made using the same basic method, but with slightly different ingredients and a different amount of sweetness. Please keep in mind that many of the ingredients are measured in grams.
