To accommodate both mashing methods they must have sophisticated equipment. The mash tank is made either of copper or of stainless steel. Some are directly fired by natural gas, or steam-heated through a jacketed outer shell. In some breweries the temperature of the whole mash is raised by adding near-to-boiling water.
