On top of that, the beer is going to take on the flavor of anything that you add. Even small amounts make a huge difference. A typical home brew recipe will make from 40-50 bottles. That sounds like a lot until you realize that an ounce of orange peel can be used to flavor the entire batch. If there is anything else in the carboys because they have not been cleaned properly, you can be sure that it is going to impact the overall flavor of your beer.

The rule of thumb is to start the brewing process by sanitizing everything. If you bought a kit, it probably came with a powdered sanitizer. Even if you did not get a kit, you can get this powder at a brew store. You just mix it with water; a very small amount of powder is needed for an entire batch of sanitizer. It is then best to buy a spray bottle like those that you would use for cleaning windows and use it to apply the sanitizer to all of the different parts. This way, you do not have to touch them more than necessary.

It should be noted that the sanitizer is not a cleaning solution. Everything must be cleaned with soap and water first if it is actually dirty, and then it can be sanitized to kill any bacteria. You may also want to sanitize your hands a few times during the process.

Another thing to note is that you do not have to worry about sanitizing anything that will be boiled. The boil itself will kill any germs, so sanitizing would be redundant. It is not bad if you forget and you accidentally sanitize your boiling pot. You are not going to hurt anything. You are just wasting your time.

As far as preparation is concerned, you will have a lot of time during the boil to get things started. For the first day, all you are going to do is boil everything down, create a wort, add water to the wort, and then put the mix into a primary fermentor - often, a carboy. You should definitely sanitize and clean the carboy before you get to that step. You also want to sanitize the syphon and the tube that will be used to transfer the beer from the pot and into the carboy.

There are a few little things that will need to be sanitized before you start. For example, the cap for the carboy should be taken apart, sanitized, filled with water, and set aside. After you pour the beer into the carboy, you need to cap it instantly, before any contaminants can get inside. You do not want to waste your time cleaning and filling the cap while the beer is sitting there.

During the secondary transfers, preparation and sanitation are even more important since you will not be boiling anything. You have to sanitize anything that you use, such as the thief, which draws out beer so that you can measure the gravity, and the syphon and the connecting tube.
