CRACKING EGGS

Whether you crack your egg by rapping it sharply on the edge of a bowl, or use Jacques Pépin’s method of tapping the egg flat on the counter (he asserts the sharp edge will force shell into the egg, while the flat surface just creates a breach in the shell for you to pull apart), it’s a pretty simple procedure, and one that you’ve done a hundred times without getting any shell in the egg. But the 101st time, you might not be so lucky. A tiny bit of shell can ruin a drink, and really ruin a large batch of eggs. The foolproof way to avoid getting shell in your egg is to crack the egg into a small bowl first, verify that there’s no shell, and dump it into any other eggs, the drink, or whatever the destination is.
