Mini Turkey Meatloaves

Ingredients

⅓ cup minced onion

¼ cup grated carrot

2 garlic cloves, minced

2 tablespoons ground almonds

2 teaspoons olive oil

1 teaspoon dried marjoram

1 egg white

¾ pound ground turkey breast

Directions

In a medium bowl, stir together the onion, carrot, garlic, almonds, olive oil, marjoram, and egg white.

Add the ground turkey. With your hands, gently but thoroughly mix until combined.

Double 16 foil muffin cup liners to make 8 cups. Divide the turkey mixture evenly among the liners.

Bake for 20 to 24 minutes, or until the meatloaves reach an internal temperature of 165°F on a meat thermometer. Serve immediately.
