1.In a pan, sauté the peppers with the olive oil. Salt and pepper to taste.

2.Mix with the sautéed onion, and prepare the couscous.

3.Cook the lamb ribs on a grill at 325 degrees on each side for 2 minutes or longer, to taste.

4.Spoon the peppers and onions onto plates, arrange the ribs around or on top of the vegetables, and serve the couscous on the side.

Serves 2.

Coral Gables Landmarks

The Venetian Pool (above) was created from a coral rock quarry in 1923. The 820,000-gallon pool is fed with spring water from an underground aquifer. In the spring and summer seasons, the pool is filled and drained daily.
