Recipe 16: Peach Melba Spook
A cup full of this exotic and creamy dessert will make you happy and even its unique name will delight you.
Cooking Time: 3 hours 30 minutes
Servings: 4
Ingredients:
2 large egg whites
3 cups of raspberries
Half cup + 1/3 cup of sugar
5 halved and pitted peaches
Half cup of water
Directions:
1. Boil water and half cup of sugar in a saucepan for 10 minutes while stirring over low heat. Refrigerate it for 30 minutes.
2. In a food processor, put ¼ cup of sugar syrup, half of the raspberries and 3 peaches and blend for 5 minutes. After passing the mixture through a sieve, refrigerate the mixture for 1 hour.
3. Put 1/3 cup of sugar and egg whites in a bowl of mixer and set it over a pan of simmering water and cook for 2 minutes while whisking. After removing heat, whisk the mixture for 5 minutes at high speed till stiff peaks form.
4. Fold the fruit puree into egg whites mixture and whisk well. By following the manufacturer’s directions, freeze the mixture in an ice cream maker.
5. Prepare 4 glasses with a layer of sliced peaches, spoon and raspberries. Serve chilled.
