EGGS

In the early history of American beverages—when a housekeeping book was more common than a cocktail guide—there was an abundance of drinks that combined eggs and alcohol. Some of them, such as caudles and syllabubs, would not likely please the contemporary palate. But as the cocktail came into fashion and displaced some of those more primitive drinks, eggs maintained a prominent role in cocktail manufacture well into the twentieth century. Some of the most famous American drinks involved eggs or egg whites, such as the Ramos Gin Fizz, Whiskey Sour, Sherry Flip, Pisco Sour, and Silver Fizz. Over time, however, eggs fell out of fashion, especially with the industrialization of the American food system in the second half of the twentieth century. The greater the distance that came between Americans and their eggs, the less likely you were to see them appear in cocktails, and the more likely consumers were to fear raw eggs as being unsafe for consumption. To be certain, there can be dangers associated with using raw eggs, but it’s not eggs per se that are potentially hazardous. Yard eggs or farmers’ market eggs, for example, are substantially less likely to contain salmonella than are commercial eggs. Fresh eggs are safer than old eggs. When properly handled, they are generally safe in cocktails (unless you have a compromised immune system, in which case pasteurized egg whites are an option).

Several factors converge in the egg’s favor. First, high-proof alcohol is a natural antimicrobial. Second, many egg cocktails include citrus juice, whose low pH also has germ-killing properties. Lastly, most egg cocktails require just the egg white. Deleterious bacteria, if present at all, tend to reside in the yolk or the egg’s shell. If you are concerned about safety, “sanitize” your eggs with a spritz from a spray bottle of vodka or gin! Eggs add body and texture to a cocktail—buy quality fresh eggs and use them properly, and you are in for a classic tipular treat.
