SERVES 1
Dash absinthe
3 dashes bitters
1 sugar cube
2 ounces whiskey
Lemon peel
Chill a rocks glass in the freezer for five minutes. Pour absinthe into chilled rocks glass, and carefully swirl it around to coat the glass. Discard excess liquid and set glass aside. In a mixing glass, muddle bitters and sugar cube with a muddler or the back of a wooden spoon. Add whiskey, fill with ice, and stir. Strain mixture into prepared rocks glass. Twist a slice of lemon peel over the rim to absorb any extra oils, and discard peel.
