Specific lettuces

• Cos, romaine and little gem Particularly good with Caesar dressing (p14).

• Escarole and frisée Escarole and its frillier, bitterer cousin (aka curly endive) are the lettuces of choice (unless you have some leftover dandelion leaves) when making a traditional salade Lyonnaise. Toss the lettuce with lardons and classic vinaigrette and top with a poached egg. Serve with croutons.

• Iceberg Frankly, this has little in the way of flavour but is refreshingly crunchy so use to give body to floppy salads or as a bed for soft things such as prawn cocktail.

• Iceberg slaw Make a similar dish to coleslaw (p53). It might be a good idea to lighten the mayonnaise with yoghurt but is certainly not essential.

• Iceberg wedge A traditional salad in America is a wedge of iceberg lettuce, in the piece, drizzled generously with blue cheese dressing and sprinkled with crunchy bacon bits.

• Little gem Good cooked in butter and ideal for adding to peas (see above).

• Round, Boston and Bibb Soft-leaf lettuces are also good cooked with peas (see above).
