• Put the coconut oil in a deep casserole or ovenproof dish. Place on the low rack and melt for 1 minute at 200°C.

• Add the chicken, onion, garlic and ginger. Cook for 5–8 minutes, turning occasionally. NB: If you prefer, you can do this in a sauté pan on the hob.

• In a pestle and mortar, grind the cinnamon, cardamom pods, cloves, caraway seeds, turmeric and curry powder. Mix this with the ground almonds before adding to the chicken. Stir well and then add the chicken stock. Cook for a further 10 minutes to bring up to temperature and then simmer, stirring occasionally.

• Stir in the yoghurt and coconut milk. Place a foil lid on the dish and cook for a further 15 minutes.

• Sprinkle with desiccated coconut and fresh coriander.

• Serve with basmati rice.
