Strawberry Cheesecake Smoothie

Prep time: 5 minutes Yield: 2 (¾-cup) servings

If you love cheesecake but are post-op and can’t tolerate the sugar and fat content of such desserts, look no further. The tang of cottage cheese and buttermilk mimics the flavors of cheesecake and gives this smoothie added protein to boot. The strawberries bring a fruity sweetness.

¾ cup 4 percent milkfat cottage cheese

2 teaspoons alcohol-free vanilla extract

⅓ cup unsweetened almond milk

⅓ cup low-fat buttermilk

1 cup frozen strawberries

2 teaspoons stevia or your preferred low-calorie sweetener

1. In a blender, combine the cottage cheese, vanilla, almond milk, buttermilk, strawberries, and stevia and purée on high speed until smooth, about 60 seconds.

2. Pour into 2 glasses and enjoy.

3. Store any leftover smoothie in a sealed container, such as a mason jar with a lid, in the refrigerator for up to 2 days. The liquid and solid ingredients will separate and impact the taste and texture, so reblend the smoothie for 10 to 15 seconds before serving.
