Tarragon Chicken

The first time I tasted this classic French dish was in a small café on a winding street in Montmartre, my favorite section of Paris. At the time, I thought it was one of the best things I had ever tasted. After adapting it to the slow cooker, I still think so today, some twenty years later.

Serves 4 to 6

¾ cup plus 2 tablespoons all-purpose flour

1 teaspoon salt

1 chicken, cut into serving pieces and skinned

2 tablespoons unsalted butter

2 tablespoons olive oil

1 yellow onion, finely chopped

1 cup dry white wine

1 cup chicken stock

6 sprigs tarragon

1 cup heavy cream or half-and-half
