BEER AND SRIRACHA–CANDIED NUTS

If I’m ever the proud owner of a beer bar, I’ll serve up some candied nuts. Not just any candied nuts, but ones that make you want another sip of that beer you ordered. Sure, those nuts will be free, and they’ll be so good that you’ll eat them by the handful, but that perfect mix of sweet, salty, and spicy will make you want more beer. Which you’ll have to pay for. I’m pretty devious.

MAKES 21⁄2 CUPS

1⁄3 cup IPA

1⁄2 cup brown sugar

1 tablespoon unsalted butter

1⁄4 teaspoon sriracha

Pinch cayenne

21⁄2 cups mixed nuts

Preheat oven to 350°F.

Add the beer and brown sugar to a large saucepan over medium heat. Stir until the sugar has melted. Bring to a boil and allow to boil untouched for 3 minutes.

Remove from the heat; stir in the butter, sriracha, and cayenne. Add the nuts and stir until all the nuts are well coated.

Line a baking sheet with a silicone baking mat (or parchment paper) and spread nuts in an even layer on prepared baking sheet.

Bake for 6 minutes, stir, then bake for an additional 6 minutes. Remove from the oven, allow to cool, then break apart.
