Veggie Soup
Healthy food doesn’t have to be bland, boring. This recipe is one proof to this. Loaded with veggies but not short on flavor, this soup will surely satisfy you and your family.
Serving Size: 5
Preparation Cooking Time: 30 minutes
Ingredients:
• 2 tablespoons olive oil
• 1 onion, chopped
• 3 cloves garlic, minced
• 1 green bell pepper, chopped
• 1 cup carrots, chopped
• ½ cup green beans, sliced
• 1 cup cauliflower florets
• 2 cups green cabbage, chopped
• 14 oz. canned diced tomatoes (unsalted)
• 4 cups reduced-sodium vegetable broth
• 1 bay leaf
• Salt to taste
• 15 oz. canned white kidney beans, rinsed and drained
• ¼ cup fresh basil leaves, chopped
• 4 cups spinach, chopped
Instructions:
1. Add the olive oil to pan over medium heat.
2. Cook the onion, garlic and bell pepper for 3 minutes, stirring often.
3. Add the carrots, green beans, cauliflower and cabbage.
4. Cook for 5 minutes.
5. Pour in the tomatoes and broth.
6. Add the bay leaf and season with the salt.
7. Simmer for 5 minutes.
8. Transfer the mixture to a pressure cooker.
9. Seal the pot and cook on high for 5 minutes.
10. Release the pressure naturally.
11. Discard the bay leaf.
12. Stir in the beans, basil and spinach before serving.
