Caramelized Honey Ice Cream with Deschutes Brewery Obsidian Stout

¾ cup honey

Water

Lemon juice

1⅓ cups whole milk

½ cup plus 2 tablespoons sugar

½ cup skim milk powder

2 cups heavy cream

3 egg yolks

To caramelize the honey:

Heat the honey, 1 teaspoon water, and a few drops of lemon juice in a saucepan over low heat. Stir constantly until bubbles begin to form. When the mixture begins to simmer, stop stirring and let it heat for another 1 to 2 minutes, until the honey darkens. Remove from the heat.
