State of the Industry

The brewing industry has risen and fallen countless times over the years, decimated by wars, earthquakes, and poor economies. Saké production peaked in 1973 and has been on the decline ever since, due in a large part to the introduction of beer, wine, and other alternatives.

Long ago the battle was more often between the large mass producers of saké and the smaller brewers from the countryside struggling to survive in their shadow. Now things are hard everywhere, and each year a few more breweries cease operation.

Yet, paradoxically, better saké is being brewed more now than ever before. While consumption overall is on the decline, consumption of premium saké is actually on the increase, albeit slightly. Sadly saké like this is not as profitable, and the industry continues to sag despite how wonderful the product is.

All is not lost, however, and the status of the industry is expected to again stabilize. While a few more kura may disappear, the market will find its balance again, and demand for fine saké will likely continue to grow at its slow if measured pace.
