Ingredients
12 oz yellow fettuccine (regular)
12 oz green spinach fettuccine
5 oz full-fat cottage cheese
½ cup butter
½ cup finely grated parmesan
Salt and freshly ground black pepper to taste
Preparation
Cook all pasta in a large pot of water with a teaspoon of salt (3-5 minutes for fresh fettuccine and 8-10 minutes for dried).
Strain using a wide sieve and place in a large bowl.
Place cottage cheese in a separate bowl, add melted butter, salt, and pepper.
Add parmesan to the cottage cheese bowl and mix. Serve immediately.
