1. Remove the stems of the elderflowers as close to the heads as possible, then shake the flowers to remove any persistent insects. Place the flowers in a large mixing bowl. Cut the lemons into quarters.

2. Put the blueberries, sugar, lemon, citric acid, and water in a large pan. Bring to a boil then reduce the heat and let the mixture simmer for 15–20 minutes, squashing the berries with a potato masher or the back of a spoon.

3. Once all the berries are reduced to a pulp, pour the mixture into the bowl containing the elderflowers, making sure they are completely covered (use the back of a wooden spoon to push them in, if necessary). Cover the bowl with a clean dish towel and let steep overnight.

4. Strain the mixture through a fine sieve; if you want a really clear syrup, strain it again through a jelly bag (see page 11).

5. Pour the syrup into sterilized bottles (see page 11); use within 3 months. Alternatively, freeze in smaller containers (see page 11).
