1.5 ounces pyment
1.5 ounces Madeira
0.5 ounce lemon juice
0.25 ounce honey syrup*
3 dashes Peychaud’s Bitters
2 dashes Angostura Bitters
Pour the honey syrup and lemon juice into a stirring container first, letting the acid and sweetness meld before adding ice. Now, add the pyment and Madeira with three dashes of Peychaud’s and two of Angostura. Stir for at least two minutes. Build a tall collins glass with cubed ice, pour the mix over the ice, and garnish with a lemon twist.
