It’s difficult to find an ingredient more tied to the Saltwater South than, well, salt. For thousands of years, people have used salt to preserve food, which of course every civilization needs to survive.
From the beginning of recorded history, humans have linked their fortunes to salt. In fact, the word salary comes from the Latin word for salt. We wanted a cocktail on the menu that would symbolize this, and the Preservationist became that cocktail, based on fresh lemon juice and a house-made salt tincture.
