The mineral in which wort is most often deficient is zinc, which is important for cell reproduction and alcohol production. Since malt and brewing water have limited quantities of zinc, the homebrewer has to actively add it into wort prior to fermentation. Although there are a range of methods to do so, the homebrewer typically adds a comprehensive yeast nutrient supplement, also known as a yeast energizer, containing zinc for this purpose. There are many varieties of yeast nutrient supplements available, each one serving a different purpose, so make sure the one you choose contains zinc before adding. Also, make sure to abide by the dosing recommendation of the manufacturer, typically ½ teaspoon for 5 gallons is sufficient. Adding more than the recommended amount is up to the brewer’s discretion, but be aware the exceeding the recommended levels can lead to off-flavors and poor fermentation. Yeast nutrients are added to the wort toward the last 15 minutes of the boil to avoid binding and precipitation through trub.
Lastly, wort that contains a high percentage of adjuncts, especially sugars, is nutrient deficient, and it’s a good idea to actively compensate for this through yeast nutrient supplements. Simple varieties like diammonium phosphate strictly add back the nutrients phosphate and FAN, which are present in malt wort; however, it is more effective to use a comprehensive supplement containing basic brewing nutrients plus other essential minerals like zinc. As before, make sure to add toward the end of the boil to avoid precipitating out of the wort and to use the recommended dosing.
