At lunchtime, I was reading the Macao Post Daily aloud to Paolo. Seemed like a peaceful respite for both of us. After that I got back to the restaurant for the repetitive and gargantuan task of being on the phone. There were orders to be made, basil, parsley, rocket, Chiantis, Valpolicellas, Proseccos, arborio vialone rice (there were always two risotto dishes for the bored and/or fussy diners or for those who came to a pizza restaurant to not eat pizza), sea bass, veal, pepperoni, salami, tuna, Parma ham, radicchio, it was ceaseless. It was a shopping list for 75 people, not a family of four. God, how much did all these people consume? There was only an hour left by the time I had finished paying bills and placing orders and receiving deliveries. I was using the takings to pay the medical bills and the creditors. We owed so much to so many. I had to duck home, change into a swan, come back and start croaking without a care in the world the songs of Paolo’s youth.
