Chicken + Turkey

I wonder how many recipes there are in the world for chicken dinners. One billion, perhaps? So, when I was creating Healthyish chicken recipes, it was important to me that I offer something helpful, new, and delicious, whether that’s transforming store-bought rotisserie chicken into quick tacos or teaching you how to roast juicy (never dry) boneless chicken breasts.

And, in general, I believe we could do well with a little less meat. It’s good for the planet, and it’s also good for your wallet. Serving sizes hover between 4 to 6 ounces per person in the Turkey and Chickpea Burgers (this page) and in the Chicken and Greens Sauté with Peanut Sauce (this page). Making up for the difference with chickpeas and vegetables stretches the meat further, and is less caloric. Win-win.
