Spiced coconut & roasted carrot soup

This is a classic spiced carrot and coconut soup, with a backnote of lime and coriander. The kaffir lime leaves and lemongrass give this dish its distinctive Asian twist, whilst the coconut milk and chicken stock provide the protein portion, as per the Plan’s principles.

Serves 4

500g (1lb 2oz) carrots, roughly chopped

5g (¼oz) coriander seeds, crushed

15g (½oz) coconut oil

1 large onion, finely chopped

6g (¼oz) fresh root ginger, finely chopped

1 garlic clove, crushed

2 stalks lemongrass, peeled and chopped

1 small fresh green chilli, deseeded and chopped

1 stick celery, finely chopped

4 kaffir lime leaves

900ml (1½ pints/3⅔ cups) Chicken Broth (see here)

200ml (7fl oz/generous ¾ cup) coconut milk

15g (½oz) coriander (cilantro), roughly chopped

salt and ground black pepper

juice of 1 lime

For the garnish:

12 fresh coconut slices

1 small fresh red chilli, deseeded and finely sliced

1 small fresh green chilli, deseeded and finely sliced
