Salads and Soups

When it comes to eating, I’m no shrinking violet. I can put down a notable amount without a struggle. But during pregnancy, when my stomach starting losing space to a growing baby or babies, my strategy for noshing had to change. I simply couldn’t fit in typical portions of food comfortably without suffering heartburn or uncomfortable fullness, even if I sometimes still felt hungry!

Salads and soups became staples because they can pack a punch of nutrients without stuffing a stomach silly. What’s more, good ones are usually exceptionally well-rounded meals with all that color and variety in a single bowl or plate.

Salads take a little bit of prep work, but if you keep great ingredients stocked and even wash, chop, and store ahead of time, lunch or dinner can be ready in a jiffy. Some of the salads included in the following pages can be completely assembled and eaten for several days afterward without unpleasant sogginess or dulling of flavors. Try Everlasting Kale and White Bean Salad (page 167), Black Rice Salad with Roasted Asparagus and Tuna (page 157), or Rainbow Farro Salad (page 171).

Soups are a gift that keeps on giving. Since a single recipe almost always yields at least four servings, usually more, if you invest the time once, you save tons of time by only having to reheat lunch or dinner thereafter. This kind of streamlining will save you when you’re too tired to cook while pregnant, and later, too harried to wait for simmering with a demanding baby on your hip. Soups are also usually excellent candidates for freezing, which extends their worth even more. The ones in this chapter require relatively little time (and some are downright speedy) for big results. Chapter 5, “For Now and Later,” includes more soups and stews that take slightly longer to prepare.

Colorful meals with a variety of ingredients are a great gauge for nutritional worth. Good salads and soups can really maximize potential in smaller portions.
