Cheesy Pepper Spaghetti

This is a meal that even the pickiest eaters will love. It’s simple to make in 30 minutes and can be doubled or tripled for larger groups. I have made it for many a cold fall or winter evening.

16-oz. pkg. spaghetti, uncooked

1 t. pepper

1 c. grated Parmigiano cheese

1 c. grated Pecorino Romano cheese

Cook spaghetti according to package directions, just until tender. Drain, reserving one cup of hot pasta water. Place hot spaghetti in a large bowl. Add pepper and cheeses. Stir gently, adding reserved pasta water in small amounts, until cheese melts and forms a creamy sauce. Serve immediately. Makes 4 servings.
