John Freeman decided to move his Piggy’s Barbeque to a larger, more prominent location in Bricktown after seeing the steady flow of customers at Spaghetti Warehouse. Freeman combined two buildings at 303 and 309 East Sheridan Avenue, spent $1 million on renovations, and created a tribute to Dixieland jazz in a building designed to resemble a turn-of-the-20th-century tavern. The new Piggy’s opened with Dixieland jazz played nightly in a restaurant decor consisting of old railroad timbers, old stained glass, boxcar siding, wood paneling, and bars from the city’s original 1890 territorial jail.
