Dry Vs Liquid Extracts

You can by malt extracts instead of making your own, and this generally what every beginner brewer does. The malting process is long, tedious and exacting. If you don’t do each step exactly right, your beer’s overall appearance, taste and odor can and probably will be affected. There are two types of malt extract offered-dry and liquid. Knowing which one to use is generally a matter of preference.

The major difference between the two is that liquid is less expensive pound for pound than dry extracts. With liquid extracts, you can buy them in pound fractions, so you can buy them for the recipe and not worry about waste. However, liquid malts require a few things that dry doesn’t. For instance, because it settles to the bottom of the boiling pot, it can burn, and give your beer an acrid flavor.

This means you either have to take the pot off the burner and stir like mad, or not add the extract at the beginning of the boiling process. If you do wait to add your liquid extract, it is less likely to burn and it can make your beer lighter, which is almost a win-win situation.
