Pour the olive oil into a small saucepan and add the chili flakes, chilies, lemongrass and lime leaves. Heat the oil for 3 minutes over medium-low heat. Heating the oil encourages the flavors to infuse efficiently and quickly. Stir in the salt (this will help to keep the oil clear) and leave the oil to cool.

Insert the basil sprigs into a 1-pint sterilized bottle. Using tongs, transfer the lemongrass, fresh chilies and lime leaves from the oil to the bottle. Using a funnel, pour the oil and chili flakes into the bottle until the other ingredients are submerged. It is important that the oil covers the flavorings—if it doesn’t, add a little extra oil.

Put the lid on and leave the oil and flavorings to infuse for 3 days in the refrigerator, turning the bottle occasionally. Store in the refrigerator and use within 2 weeks.
