PASTA WITH GOAT CHEESE AND ASPARAGUS

30 MINUTES OR LESS FEELING FANCY

This gorgeous pasta dish combines tangy, creamy goat cheese with bright fresh asparagus. Cooking the pasta on the stovetop while the asparagus is roasting in the oven means that this dish can easily be on the table in under 30 minutes.

1 POUND ASPARAGUS, TRIMMED, CUT ON AN ANGLE INTO ⅛-INCH-THICK SLICES

1 TABLESPOON OLIVE OIL

1 TEASPOON KOSHER SALT, PLUS MORE IF NEEDED

½ TEASPOON FRESHLY GROUND BLACK PEPPER, PLUS MORE IF NEEDED

8 OUNCES PASTA

2 OUNCES GOAT CHEESE

¼ CUP HEAVY (WHIPPING) CREAM

GRATED ZEST AND JUICE OF 1 SMALL LEMON

1 . Preheat the oven to 450°F. Line a baking sheet with parchment paper or aluminum foil.

2 . Arrange the asparagus on the prepared baking sheet and toss with the oil. Season with the salt and pepper. Roast the asparagus until tender, about 10 minutes.

3 . Meanwhile, bring a medium pot of salted water to a boil and cook the pasta according to the package directions until al dente. Drain, reserving 1 cup of the cooking water.

4 . Return the pasta cooking pot to the stovetop over medium heat. Add the cheese and cream and cook, stirring, until the cheese melts and the sauce is incorporated. Add the lemon zest and juice, asparagus, and cooked pasta and stir until the pasta is coated. If necessary, add a bit of the pasta cooking water to thin the sauce. Taste and adjust the seasoning if necessary. Serve hot.

Optional Finishing Touch: Garnish with freshly grated Parmesan cheese, red pepper flakes, or both.
