Making Champagne sparkle became possible following a series of discoveries, starting with the invention of strong glass that allowed wine to continue to ferment in the bottle, trapping its bubbles until the cork is popped.

Contrary to legend, French Benedictine monk Dom Pérignon did not invent bubbly Champagne. No single individual did. Dom Pérignon, however, was a master blender. While he made still wines, his insistence on using the right grape varieties in the right proportions was copied by other vintners, including clerics, much later when Champagne finally began to sparkle!
