Steak Plate with Spinach and Grilled Mushrooms
Serves: 1
Ingredients
4 ounces flank steak
Salt and pepper, to taste
cooking spray
2 portobello mushrooms, divided
2 teaspoons balsamic vinegar
2 cups baby spinach
1 tablespoon olive oil
1 tablespoon grated Parmesan cheese
1. Season steak on both sides with salt and pepper, if desired.
2. Using a medium nonstick skillet or grill pan, spray pan with cooking spray and cook steak over medium-high heat for 8 minutes on each side, or until it reaches desired degree of doneness.
3. While the steak is cooking, season mushroom caps with 1 teaspoon vinegar, salt, and pepper, and add to the grill or pan.
4. Cook the mushrooms for 10 minutes.
5. Remove steak from heat and place it on a cutting board to slice diagonally.
6. Remove mushrooms when cooked, and slice on top of spinach.
7. Dress salad with olive oil and remaining teaspoon of vinegar. Place sliced steak on top of salad and top with Parmesan cheese.
