1 In a soup pan over medium heat, soften the chopped onion in the coconut oil.

2 Add broth and carrots and simmer until the carrots are tender, about 5 minutes.

3 Add remaining ingredients and simmer 2 minutes. Serve warm.

Lori’s Classic Potato Leek Soup

• 3 potatoes, cut into cubes

• 3 cups cleaned chopped leeks

• 1 stalk celery, sliced

• 1 carrot, sliced

• 4 tablespoons butter

• 3/4 teaspoon salt

• 1/2 cup chicken stock

• 1 onion, minced (optional)

• Dash of nutmeg (optional)

• 1 clove minced garlic (optional)

• Dash of thyme, marjoram, or basil (optional)

• 3 cups cold milk
