47 Sparkling Rosés

3 red rose petals, rinsed well

1 ounce simple syrup

4 ounces rosé champagne (e.g., Chandon Rosé Imperial)

In a cocktail shaker, muddle the rose petals with the simple syrup. (Use a muddler or the back of a spoon.) Add the ice and shake vigorously. Add the champagne and stir. Loosely strain into a champagne flute.

48 White Lavender

3⁄4 ounce gin

3⁄4 ounce parfait amour (a lavender- colored orange liqueur)

3 to 4 ounces champagne

lavender sprig, for garnish

Combine the gin and parfait amour in a cocktail shaker with ice. Shake vigorously and strain into a champagne flute. Top off with the chilled champagne. Garnish with a lavender sprig.

49 Bellini Tini

2 ounces peach nectar (or 11⁄2 ounces peach puree)

11⁄2 ounces premium citrus vodka

1 ounce crème de peche liqueur

Splash of fresh lemon juice

Champagne

Lemon wheel, for garnish

Combine the peach nectar, citrus vodka, crème de peche liqueur, and lemon juice in a cocktail shaker with ice. Shake vigorously and strain into a chilled martini glass. Top off with champagne. Garnish with a floating lemon wheel.

50 Siren’s Song

3 ounces champagne

1 ounce ginger beer

1⁄2 ounce raspberry puree

1⁄2 ounce raspberry liqueur

Combine all of the ingredients in a cocktail shaker with ice and stir for 5 to 10 seconds. Strain into a champagne flute.
