Traditional Mexican Carne con Chilli
Mexicans roar with laughter when they hear of our chilli con carne - which literally means chilli with meat. To them that would be a huge bowl of chillies with a little meat sauce! Here is the genuine article, which is much hotter than our versions. We had a similar chilli in Barbados but without the green pepper, and with red kidney beans instead of pinto.
Serves 4
Cooking time 4-6 hrs low
Serve with grated cheese, chopped onion and corn tortilla chips
15 ml/1 tbsp groundnut (peanut) oil
450 g/1 lb minced (ground) beef
1 large onion, chopped
1 green (bell) pepper, chopped
1 large garlic clove, crushed
400 g/14 oz/large can of chopped tomatoes
½ x 200 g/7 oz/small jar of pickled jalapeño peppers, drained and chopped
5 ml/1 tsp chilli powder
1 beef stock cube
2 x 400 g/14 oz/large cans of pinto beans (not drained)
Salt and freshly ground black pepper
