Fermenting Fruit

A traditional Finnish method of storing wild blueberries involves mashing them into a jam, and stuffing this blueberry mash without any further ado into sterilized jars for storage. The lids used are smeared with a bit of honey, which acts either to enhance the seal around the rim of the jar or as an antimicrobial barrier between the jar and the outside world.

Mashed wild blueberries stored in this way will keep for up to a year in a cool place. Presumably the inherent acidity of the fruit and the activity of beneficial bacteria are the main agents of preservation. Cultivated blueberries are not as acidic as wild species and may not be suitable. Other similar, high-acid berries, like evergreen huckleberry and cranberry, may work well.
