Sassafras (Sassafras albidum): The roots of the sassafras tree are used to steep a spring tonic tea, and their root beer odor is unmistakable. The roots are cut, washed, mashed, and boiled to create the liquid. The liquid can be served sweetened or unsweetened. Do not overdo sassafras. Recent studies have shown safrole (from the sassafras root) to be a possible cause of liver cancer in laboratory rats; therefore, the FDA has banned the sale of sassafras tea. The Native American Choctaws dried and powdered the leaves to provide file powder for use in stews and gumbos.
