Corn-dependent societies have traditionally suffered from pellagra, a disease caused by severe protein and mineral deficiencies. Native American Indians knew how to treat corn to improve its nutritional value by processing it with lime or ashes and planting it next to beans, which supply the very proteins lacking in corn. So smile the next time you eat tortillas and beans. You are eating some very inexpensive protein.

CHICKEN & CORN CHILI

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

3 shallots, minced

3 garlic cloves, minced

1 pound tomatillos, husked and chopped

2 tomatoes, peeled and chopped

2 to 3 Anaheims, roasted, peeled, seeded, and chopped

½ teaspoon crumbled dried oregano

½ teaspoon ground coriander

¼ teaspoon ground cumin

1 (14½-ounce) can chicken broth

2 cups cooked and drained cannellini or white kidney beans

2 cups corn kernels

Juice of 1 lime

Coarse salt and freshly ground pepper

Chopped red onion, cilantro leaves, sour cream, Shredded jack cheese and/or lime wedges (optional)
