A quick trip through the planer levels both the top and bottom surfaces.

Give the trivet a thorough sanding all around up to #150-grit. All those slats are going to have pretty sharp edges, so be sure to ease these with a folded piece of sandpaper to slightly round the edges of the wood along each space. (PHOTO 7) There are sharp edges on the underside, too, so be sure to do the same sanding there.

Slightly round all the sharp edges with a folded piece of sandpaper.

Any finish at all works well for your trivet. However, you can certainly count on food getting spilled on it from time to time so my recommendation is a coat or two of polyurethane. I used a wiping varnish that cured quickly and gave the trivet a nice satin sheen.
