The source of horseradish’s pungency is the volatile oil allyl isothiocyanate, which is produced when the roots or leaves are cut into; this chemical reaction is the plant’s natural defense mechanism against grazing animals. Horseradish is easy to grow in the garden, but it can be highly invasive and difficult to eradicate once established. For this reason, many people prefer to grow it only in pots. The plant produces fragrant, small white flowers. The roots are ready for harvesting in the fall. Once harvested, horseradish roots can be stored in cool, dry conditions for months.
