Mediterranean Breakfast Recipes

Baked Eggs with Feta and Avo

Time: 40 mins

Serves 2

Calories: 711 ​ Carbs: 19g ​ Fat: 60g ​ ​ Protein: 30g

Ingredients:

olive oil/non-stick spray

4 eggs

1 avocado

2 – 3 tbsp Feta cheese, crumbled

salt and freshly ground black pepper

Preparation:

Preheat oven to 400°F (200°C). Set gratin dishes on baking sheet, heat in warmed oven for 9 mins.

Break eggs into ramekins. Allow eggs and avocado to come to room temperature for 14 mins, so the yolks do not get too done during cooking.

After 15 min, peel avocado and slice each half into 6.

Remove warmed gratin dishes and spray with olive oil/non-stick spray.

Arrange avocado slices in dishes, and then gently tip two eggs into each dish.

Season to taste and sprinkle Feta over tops.

Bake for 12 to 15 mins, until whites are set to your liking.

Serve hot.
