What you need
• 55g (⅓ cup) caster sugar
• 55g butter
• 1 egg
• 65g (½ cup) self-raising flour
• 1 tbsp Greek-style yoghurt
• Your choice of flavour (see here for ideas)
ALLERGY INFO
DAIRY Use dairy-free spread
EGG Use 2 tbsp of Greek-style yoghurt
GLUTEN Use gluten-free flour
NUT Check labels and choose version appropriately
Adult prep
• Take the butter out of the fridge at least an hour before starting so it is soft.
• Preheat oven to 170°C/325°F/Gas 3
• Lay out: ingredients, mixing bowl, mixing spoon, 6 cupcake cases, cupcake tray and metal spoon or spatula.
How to make
1 Put the sugar and butter into the bowl and mix until they are mixed together.
2 Break the egg into the bowl and mix.
3 Put the flour and yoghurt into the bowl and mix it all up.
4 Put in the flavour you have chosen (see here for ideas) and mix.
5 Put the cupcake cases into the tray.
6 Spoon and scrape the mixture into each cupcake case. Make sure each one has the same amount.
Ask an adult to put the cakes into the oven for 15 minutes until the tops feel springy to touch. Leave them to cool before decorating.
