Vulnerable new shoots
Young spring growth is susceptible to damage by spring frosts because the soft shoot tips havenât yet ripened and accumulated protective sugars.
HEALTHY PLANT
At temperatures above freezing plant cells are filled with liquid, which keeps cells rigid (turgid) â holding the plant upright â and creating an environment where life processes can continue normally.
FROST DAMAGE
During freezing weather ice crystals can form within the cells of plants that arenât fully hardy. Expanding crystals puncture cell walls and membranes, so that liquid escapes when they melt, causing plant tissues to crumple.
