TYPES OF HONEY

The flavour, consistency, colour, smell, and medicinal properties of honey are dependent on the type of flower from which the honey is made. In most settings, bees collect nectar from a variety of sources and these nectars combine to create a unique flavour profile that is different with every harvest.

Depending on the location and time of year, there may be a dominant bloom that honey bees favour and so their honey will be largely influenced by the properties of that nectar source. Beekeepers in different regions have learned to recognize local nectar sources and will label their honey as such. Examples include buckwheat honey, sage honey, tupelo honey, eucalyptus honey, and heather honey.
