Fish sauce 4 tablespoons

Chopped fresh tomatoes ½ lb.

Water 4 cups

Lime juice 4 tablespoons

Torn kaffir lime leaves 3

Smashed, chopped lemongrass 1 stalk

Chile paste 2 teaspoons

Boneless, skinless chicken breast strip slices 1 (1/2 lb.)

Chopped button mushrooms 0.125 lb.

Crushed and halved Thai chiles 2

Instructions:

Bring the water to boiling in the saucepan and add kaffir leaves, galangal, and lemongrass and cook for a minute.

Add the fish sauce to the pan and cook for one more minute. Then add the chile paste, bring the heat to low. Add the tomatoes, then cook them for 3 minutes.

Add the mushrooms to it and cook them for one minute. Then increase the heat to high. Add the chicken and cook while occasionally stirring for 5 minutes or until the chicken is done.

Add the lime juice, then stir.

Add the chiles to the soup, then remove from the heat.
